When the Thanksgiving dinner feast is over, there is nothing better than leftovers and making one of these mouthwatering Thanksgiving sandwiches, loaded with gravy, stuffing and cranberry sauce, is what I look forward to!

Leftover Thanksgiving Turkey Sandwiches

Every Thanksgiving, the leftover turkey and sides spark endless possibilities, but this sandwich is my go-to favorite the weekend after Thanksgiving.

I like to pack mine with a little of everything!  Turkey, stuffing, cheese, and cranberry sauce doused in gravy between two slices of buttery toasted sourdough bread! It’s the perfect combination of flavors!

My Favorite Leftover Turkey Sandwich Ingredients

Below is a list of the ingredients you’ll need to gather to make this recipe. Scroll down to the full recipe card for the specific amounts.

Ingredients for a thanksgiving turkey sandwich: sliced sourdough bread, gravy, dressing, cranberry sauce, turkey slices, butter, mustard or mayo, arugula or lettuce, and Swiss cheese.
  • Sourdough bread –  swap it for your favorite bread or rolls. Ciabatta, brioche, wheat bread, etc.  
  • Butter – you an also use ghee or olive oil but I love that buttery goodness.
  • Mustard or mayonnaise – I like dijon mustard but use regular and add some mayo too if you’d like.
  • Sliced turkey meat –  Use white meat or dark meat or a slice of each.
  • Cheese – I love Swiss but use any favorite like American, cheddar cheese, provolone, or even mozzarella. A thin layer or cream cheese is also yummy.
  • Stuffing – I always make extras so I have plenty of leftover stuffing.
  • Gravy – warmed up in the microwave. If you run out, I have used Trader Joe’s turkey gravy. 
  • Cranberry sauce –  jellied or whole berry works)
  • Lettuce, arugula, or spinach

Variations You Can Make

1. Add a layer of mashed potatoes.
2. Add slices of bacon or caramelized onions.
3. Swap out the cranberry sauce for this cranberry relish or a fig jam or apple chutney if you prefer less tartness.
4. Toast the bread in a toaster oven, on a griddle or use a panini press if you have one!!

How to Make this Leftover Thanksgiving Sandwich

Step 1Toast the Bread: Heat butter in a skillet over medium heat. Add the bread slices, toasting both sides until golden brown.

Step 2Warm the Turkey: Microwave the turkey slices for 20-30 seconds, or leave them cold if you like a mix of temperatures.

Step 3Assemble the Sandwich: Spread mustard, mayo or both on one side of the bread. Layer the turkey, cheese, stuffing, and a drizzle of warm gravy.

Step 4Add the Toppings: Top with greens and cranberry sauce. Press the other slice of bread on top and gently press the sandwich together.

Serve with extra gravy for dipping if desired.

Tips

Use sturdy bread to hold up to the hearty fillings.

Don’t skip the warm gravy—it adds an extra layer of flavor and moisture!

Thanksgiving Sandwich

Ingredients

  • 2 slices sourdough sandwich bread
  • 2 tablespoons butter
  • 2 tablespoons mustard regular, dijon or mayonnaise
  • 2 thick slices leftover turkey meat
  • 2 slices cheese Swiss, American, cheddar, etc
  • ½ cup stuffing
  • ¼ cup gravy warm
  • ½ cup cranberry sauce
  • Lettuce arugula, or spinach

Instructions

  • In a large skillet, add the butter and melt over medium heat.
    2 tablespoons butter
  • Place each slice of bread over the melted butter and toast both sides until golden brown.
    2 slices sourdough sandwich bread
  • Repeat with additional slices for more sandwiches.
  • While toasting the bread, heat the turkey on a microwave safe plate in the microwave for 20-30 seconds. Or leave the turkey cold, if you’d.
    2 thick slices leftover turkey meat
  • Add a little mustard and or mayo to one side of the bread.
    2 tablespoons mustard
  • Add 2 turkey slices and then top with cheese.
    2 slices cheese
  • Next add the stuffing and drizzle on 2-3 tablespoons of warm gravy.
    ½ cup stuffing, ¼ cup gravy
  • Top with your favorite greens and cranberry sauce.
    ½ cup cranberry sauce, Lettuce
  • Place the other slice of bread on top and gently press..

Notes

Serve with more gravy for dipping if desired.
Use any type of bread or rolls you like, toasted or soft.
Use any favorite cheese. Provolone and mozzarella are wonderful too.

Add a mashed potato layer.
