Salmon Croquettes

I love making these easy salmon croquettes with fresh salmon and simple sautéed veggies and seasonings. A favorite dinner of ours, they are pan fried to perfectly golden brown and crispy on the outside and flaky on the inside.

Fresh Salmon Patties

Salmon croquettes sound kind of fancy don’t they? Well, despite the fancy name, these little golden brown salmon patties (aka salmon cakes) are a great recipe that is really easy to make on weeknights or even as an appetizer for special occasions.

Pan fried salmon patties (a classic southern recipe) doesn’t have quite the same ring as salmon croquettes, but that’s essentially what they are. My recipe uses fresh salmon mixed with sautéed bell peppers and onions, an egg, breadcrumbs, and plenty of flavor. 

What to serve with salmon croquettes?

They’re even more delicious when paired with a dipping sauce like ranch dressing, cucumber dill sauce, remoulade sauce, garlic aioli or just plain tartar sauce. I used to eat mine with ketchup when I was growing up.

They are even delicious with something as simple as sour cream, a dollop of plain Greek yogurt, hot sauce or a squirt of lemon juice. 

For a full meal, serve them on the side of rice or roasted potatoes with a crisp green salad. A crisp glass of white wine to wash them down is always a nice touch

Ingredients You’ll Need

Below is a list of the ingredients you’ll need to gather to make this croquette recipe. Scroll all the way down for the full recipe card with amounts.

Ingredients for salmon croquettes - fresh salmon, flour, breadcrumbs, garlic, parsley, red bell pepper, egg, olive oil, salt, pepper, and paprika.
  • Olive oil:  For sautéing the salmon and veggies and the croquettes themselves too.
  • Salmon: I use fresh salmon in my recipe. Keep the skin on until after it is finished cooking.
  • Red bell pepper: Finely diced. I love the flecks of red throughout the patty. 
  • Red onion: Diced onions give the salmon croquettes a crunchy element. You can also use yellow onion or green onions if preferred.
  • Garlic cloves:  Minced. I like using fresh garlic but you can use jarred minced garlic too.
  • Breadcrumbs: Regular breadcrumbs will do. If you want to add extra seasoning, feel free to use Italian breadcrumbs.
  • Large egg: Beat and add to the mixture. It’s what helps everything hold together.
  • Fresh parsley: A fresh herb is always a great addition to any fish recipe.
  • Salt and pepper: Added seasoning.

Variations/ Substitutions

1. Use canned salmon can be used as a shortcut.  You will need four 5-ounce cans.
2. Use yellow, orange, or green bell pepper instead of red.
3. Dip the patties in Panko breadcrumbs or crushed butter crackers like Ritz, before pan-searing them for an extra crispy coating.
4. For added flavor, a dash of Worcestershire sauce is a great idea. 
5. Swap the salt and pepper with lemon pepper or drizzle with fresh lemon juice before serving for a citrusy flavor.
6. Instead of parsley, use fresh dill. 

How to Make this Recipe

These salmon croquettes come together in under 20 minutes.

Step 1 – Cook the salmon skin side down on low heat for 10-12 minutes until cooked through.

Step 2 – Immediately remove the skin and transfer the cooked salmon to a large bowl. Use a fork to shred it and remove any small bones you may find. 

Step 3 – In a separate skillet, sauté the bell pepper and onion. Then, add the minced garlic and sauté for another minute.

Step 4 – Add the veggies to the flaked salmon. Add the breadcrumbs, beaten egg, parsley, paprika, salt, and pepper. Stir to combine well.

Step 5 – Heat olive oil in a skillet over medium heat. Use your hands to scoop about ⅓-1/2 cup of the mixture and form them into 16 croquettes/patties. Croquettes are shaped a bit more like an oval.

Step 6 – Cook the patties for about 3-4 minutes on each side until golden brown. Work in batches so you’re not overcrowding the pan.

Can you bake Salmon Croquettes?

If you prefer to bake them, place the croquettes on a baking sheet lined with parchment paper and bake at 400 degrees for 20-25 minutes.

Tips

  • Be careful not to overcook the salmon. 10-12 minutes should be plenty, otherwise, the salmon croquettes may be too dry.
  • Make crab cakes using this recipe. Just swap the salmon with crab! Tuna works too.
  • Serve these between Hawaiian king rolls and you’ll have mini salmon burgers! 

How to Store Leftovers?

Refrigerate: Keep leftovers in an airtight container in the fridge for up to 3 days.

Freeze: Flash-freeze them on a baking sheet so that they’re solid and won’t freeze stuck together. Once frozen, transfer them to a freezer bag and keep them frozen for up to 1 month. Thaw in the fridge before reheating.

Reheat: You can reheat them in the oven, the air fryer, the microwave, or the skillet. These reheat well, so enjoy the leftovers!

FAQ’s

Can I use another type of oil for frying?

Certainly. Avocado oil, vegetable oil, or canola oil can all be used. As long as it has a high smoke point and won’t burn the patties, it’ll work. Also think about using a neutral tasting oil so it doesn’t alter the flavors.

Salmon Croquettes Recipe (Southern Salmon Patties)

These crispy pan fried salmon croquettes are easy to make with fresh salmon and sautéed veggies and seasonings.

Ingredients

  • 3 tablespoons olive oil divided + extra for cooking the patties
  • 1.5 pounds salmon
  • 1 red bell pepper finely diced
  • 1 small red onion diced
  • 2 garlic cloves minced
  • cups breadcrumbs
  • 1 large egg beaten
  • 2 tablespoons fresh parsley chopped
  • ½ teaspoon paprika
  • ½ teaspoon salt
  • ½ teaspoon pepper

Instructions

  • In a medium skillet, add 2 tablespoons of olive oil and coat the bottom of the skillet.
    3 tablespoons olive oil
  • Add the salmon, skin side down and cook on low heat for 10-12 minutes until fully cooked.

  • Immediately remove the skin use a fork or tongs then place the salmon to a large mixing bowl and shred it using a fork. (remove any bones you may find).
  • While cooking the salmon, add a tablespoon of olive oil into a separate skillet and sauté the chopped red bell pepper and red onion until softened.

  • Then add the minced garlic and sauté for an additional minute until fragrant.

  • Mix pepper and onion mixture to the shredded, cooked salmon.
  • Add in the breadcrumbs, beaten egg, parsley, paprika, pepper and salt. Stir to combine everything well.
    ⅓ cups breadcrumbs, 1 large egg, 2 tablespoons fresh parsley, ½ teaspoon paprika, ½ teaspoon salt, ½ teaspoon pepper
  • Heat 2 tablespoons of olive oil in a skillet over medium heat.
  • Using your hands, scoop about ⅓ – ½ cup of the mixture and form into 16 croquettes/patties.
  • Cook the croquettes in batches about 3-4 minutes on each side until golden brown.
  • Serve with ranch dressing or cucumber dill sauce as a topping or to dip in.

Notes

Use white or yellow onion or green onions if you’d like.
Use yellow, orange or green bell pepper.
Use canned salmon for quick prep.
Dip the patties in panko breadcrumbs or crushed butter crackers like Ritz after rolling them for an extra crispy exterior.
Be careful not to overcook the salmon when initially cooking for the mixture. 10-12 minutes should be plenty.
Store any leftover in an airtight container in the refrigerator for 2-3 days.
To Freeze: Place the cooked patties on a baking sheet in a single layer and completely freeze. Then place them in a freezer bag and store for up to a month.
Reheat from frozen on a baking sheet in a preheated oven at 350°F for 15-20 minutes.
